Join our team as a Sushi Chef and contribute to the success of a new project at 103 2nd Avenue, opening soon.Key ResponsibilitiesManage the sushi team, guiding their work and overseeing daily tasks.Coach and mentor staff, setting objectives and monitoring performance.Lead with a professional approach in a fast-paced environment.Oversee cost control, labor management, and profitability.Maximize sales and optimize profits through food and labor cost management.Ensure high standards in kitchen security, safety, cleanliness, and sanitation.Conduct regular kitchen walkthroughs and taste checks to ensure quality and consistency.Monitor equipment cleaning and maintenance, adhering to sanitation guidelines.Train staff on proper sanitation procedures and ensure they wear uniforms and serve safe food.Assist with setting prep levels for fresh products and man-hours.Establish proper portion sizes and controls for serving periods.Develop a hands-on approach and contribute to daily production.Ensure proper presentation and preparation from each kitchen department.Assist with monitoring quality and managing vendors.Source good, organic, seasonal products.Oversee equipment purchases, repairs, and maintenance.Enforce quality standards for food served, including freshness, handling, and storage.Promote high standards in safety, security, and sanitation.Enforce Health Department rules and regulations.Assist with staffing, recruitment, and maintaining accurate employee files.Perform other duties as required.RequirementsMinimum 3 years of kitchen management experience in an upscale, high-volume setting.Superior technical and cooking abilities.Professional leadership and communication skills.Ability to multitask in a fast-paced environment.Strong work ethic and customer-focused approach.Valid NYC Food Handlers Certificate.Ability to work a flexible schedule, including days, nights, weekends, and holidays.
